Grilled soft chicken tacos with smoky chipotle BBQ and spicy chile-garlic sauce, blending Southwest and Mexican flavors.
Ingredients:
  • 2 large skinless, boneless chicken breasts, pounded to 1/2-inch thickness
  • 1 cup chipotle barbecue sauce
  • 0.5 onion, chopped
  • 2 tablespoons chile-garlic sauce
  • 6 large flour tortillas, warmed
  • 1 cup shredded Cheddar cheese
  • 0.5 cup sliced black olives
  • 1 large tomato, chopped
Instructions:
  • Get your outdoor grill ready by preheating it to medium-high heat and giving the grate a light coating of oil.
  • Grill the chicken until fully cooked, 3 to 4 minutes per side, reaching an internal temperature of at least 165°F (74°C). Set aside to cool before handling.
  • Shred the cooled chicken and combine it in a saucepan with barbecue sauce, onion, and chile-garlic sauce. Stir well to coat the chicken evenly. Heat over medium-low heat, stirring occasionally, until steaming, for about 5 minutes.
  • Spoon chicken mixture onto each tortilla, add Cheddar cheese, black olives, and tomato, roll up, and serve.
