Treat mom this Mother's Day with classic scones served warm with jam and cream for a delightful tea time treat.
Ingredients:
  • 450g self-raising flour
  • 5.00 gm caster sugar
  • Pinch salt
  • 50g butter, chopped
  • 310ml milk
  • Milk, extra, to glaze
  • Boysenberry or raspberry jam, to serve
  • Double cream, to serve
Instructions:
  • Preheat the oven to 230°C. In a large bowl, sift together the flour, sugar, and salt. Add the butter and use your fingertips to blend it into the flour until crumbly. Create a well in the center of the mixture.
  • Add the milk to the well and gently stir with a butter knife until a soft, sticky dough forms. If needed, add more milk to achieve desired consistency.
  • Place the dough onto a lightly floured surface. Gently knead until it forms a cohesive dough. Pat the dough into a 2cm-thick disc using your fingertips.
  • Prepare a floured oven tray. Cut out scones with a 5cm-diameter round pastry cutter also dipped in flour and arrange them on the tray. Brush the tops of the scones with a little extra milk for a shiny glaze.
  • Bake scones on the top rack of a preheated oven for 10-12 minutes until they are golden brown and have a hollow sound when tapped. Remove scones from the oven and transfer onto a clean tea towel, covering them lightly with another tea towel. Serve warm or at room temperature with jam and cream, if desired.
