Tasty Cuban-style sea bass with tomato, onion, caper, and white wine sauce. Perfect with rice pilaf.
Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 1.5 cups thinly sliced white onions
  • 2 tablespoons minced garlic
  • 4 cups seeded, chopped plum tomatoes
  • 1.5 cups dry white wine
  • 0.66666668653488 cup sliced stuffed green olives
  • 0.25 cup drained capers
  • 0.125 teaspoon red pepper flakes
  • 4 (6 ounce) fillets sea bass
  • 2 tablespoons butter
  • 0.25 cup chopped fresh cilantro
Instructions:
  • In a large skillet, heat oil over medium heat. Sauté onions until soft, then add garlic and sauté for another minute. Add tomatoes and cook until they start to soften. Mix in wine, olives, capers, and red pepper flakes, and simmer.
  • Add the sea bass to the flavorful sauce. Simmer gently, covered, until the fish easily flakes with a fork, approximately 10 to 12 minutes. Then, transfer the fish to a serving plate and keep it warm.
  • Turn up the heat and mix in the butter to the sauce. Let it simmer until it thickens, then gently fold in the cilantro. Drizzle the flavorful sauce over the fish and enjoy.
