Ingredients:
  • 8 green coral lettuce leaves, washed, dried
  • 36.80 gm vegetable oil
  • 100g shiitake mushrooms, shallow cross cut in cap of each mushroom
  • 5 green shallots, ends trimmed, thinly sliced
  • 5cm-piece fresh ginger, peeled, finely chopped
  • 600g green king prawns, peeled, deveined, cut into 1cm pieces
  • 250g cleaned squid hoods, cut into 1cm squares
  • 48.80 gm oyster sauce
  • 21.00 gm soy sauce
  • 1/4 tsp ground pepper
  • 125.00 ml loosely packed fresh coriander leaves
Instructions:
  • Chill lettuce wrapped in a moist paper towel until needed.
  • Heat oil in a wok over medium heat until smoking. Stir in mushrooms, shallots, and ginger; stir-fry for 1 minute. Add prawns and squid; stir-fry for 4 minutes until prawns change color and squid is tender. Stir in oyster sauce, soy sauce, and pepper; mix gently. Remove from heat, toss in coriander.
  • In serving bowls, arrange lettuce and generously spoon seafood mixture on top. Serve right away to enjoy the fresh flavors.
