Seared snapper and soy ginger noodles

Delicious and lean snapper paired with delicate Japanese flavors, cooked with minimal olive oil for a healthy meal.
Ingredients:
  • 180g dried soba noodles
  • 200g snow peas, trimmed, thinly sliced
  • 1 large bunch asparagus, trimmed, halved
  • 50g baby spinach leaves
  • 5 small radishes, trimmed, thinly sliced
  • 2 tsp sesame oil
  • 42.00 gm salt-reduced soy sauce
  • 20.00 ml mirin
  • 1 tsp fresh ginger, finely grated
  • 2.50 gm caster sugar
  • 4 (150g each) snapper fillets
  • Baby herbs, to serve
Instructions:
  • Cook the soba noodles in a saucepan of boiling water according to package instructions, adding the snow peas and asparagus during the last minute of cooking. Drain and rinse with cold water to refresh. Drain.
  • Combine noodles, vegetables, spinach, radish, and 1 tsp of sesame oil in a large bowl, mixing gently.
  • Mix together soy sauce, mirin, fresh ginger, sugar, and the rest of the sesame oil in a small bowl until the sugar completely dissolves.
  • 1. Preheat a large non-stick frying pan over high heat and give it a light spray of olive oil. Score the snapper skin with a sharp knife and cook it skin-side down for 2 minutes until crispy. Gently flip the snapper and cook for an additional 1-2 minutes until tender and cooked through.
  • Distribute noodles and vegetables evenly on plates. Place snapper on top. Drizzle with the soy dressing and sprinkle with herbs.
