Indulge in a decadent chocolate cake with a surprise: 16 Mint Slice biscuits baked inside, topped with creamy, minty butter frosting. Truly the ultimate choc mint dessert!
Ingredients:
  • 2 eggs
  • 270g (1 1/4 cups) caster sugar
  • 250ml (1 cup) buttermilk
  • 225g (1 1/2 cups) self-raising flour
  • 50g (1/2 cup) cocoa powder
  • 16 Arnott’s Mint Slice biscuits (see tips)
  • 125g butter, chopped, at room temperature
  • 225g (1 1/2 cups) icing sugar mixture
  • 20.60 gm milk
  • 1/2 tsp peppermint essence
  • Green liquid food colouring, to tint
Instructions:
  • Preheat the oven to 180C (160C fan forced). Grease a 20cm square cake pan and line the base and sides with baking paper.
  • In a bowl, whip eggs and sugar with electric beaters until pale and creamy. Slowly incorporate buttermilk and oil on low speed. Sift flour and cocoa powder over the mixture, then fold in with a spatula until combined.
  • Spread half of the mixture in the prepared pan. Place Mint Slices on top, cutting to adjust if needed. Spread the rest of the mixture over the Mint Slices.
  • Bake for 50 minutes, or until a skewer inserted into the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • To prepare the frosting, use electric beaters to whip the butter in a bowl until light and creamy. Gradually incorporate the icing sugar, beating thoroughly after each addition. Mix in the milk until fully combined. Stir in the peppermint essence. Add green food coloring and mix until evenly tinted. Spread the mixture onto the cooled cake.
