Lemon cream sauce with chicken in a rich and light texture.
Ingredients:
  • 0.25 cup all-purpose flour
  • 0.25 cup margarine
  • 2 cups heavy whipping cream
  • 2 cups chicken broth
  • 1 tablespoon dried parsley
  • 4 egg yolks
  • 0.25 cup lemon juice
  • 1 teaspoon cornstarch, or as needed
  • 4 cooked chicken breasts, broken into chunks
Instructions:
  • Combine flour and margarine in a saucepan over medium heat, stirring until a smooth paste forms.
  • Gradually whisk cream into flour mixture until smooth, then whisk in chicken broth and parsley. Simmer sauce, whisking constantly, until thickened.
  • Combine egg yolks and fresh lemon juice in a bowl and whisk until smooth.
  • Slowly incorporate the egg yolk mixture into the cream mixture, one tablespoon at a time, until the sauce lightly simmers and coats the back of a spoon. Avoid boiling.
  • For a richer sauce, combine cornstarch with 1/4 cup of sauce in a small bowl, then stir mixture back into sauce and cook until thickened, approximately 2 minutes.
  • Fold tender chicken breast pieces into the rich, flavorful sauce until the chicken is perfectly heated through.
