Start your Christmas feast with a delicious seeded soda roll for the perfect crunch.
Ingredients:
  • 600g (4 cups) Bread & Pizza Plain Flour
  • 5.00 gm bicarbonate of soda
  • 8.00 gm baking powder
  • 4.80 gm sea salt
  • 100g butter, chilled, finely chopped, plus extra, melted, for brushing
  • 6.00 gm sesame seeds
  • 2 tsp poppy seeds
  • 300ml buttermilk
  • 185ml (3/4 cup) milk
Instructions:
  • Preheat your oven to 200C (180C fan forced) and cover a large baking tray with baking paper.
  • In a large bowl, gently mix together the sifted flour, sugar, bicarbonate of soda, baking powder, and 1 teaspoon of salt. Add the butter and use your fingertips to blend it into the dry ingredients until it resembles fine crumbs. Create a well in the center of the mixture.
  • In a small bowl, mix sesame seeds, poppy seeds, fennel seeds, and the remaining salt. Set it aside. In a jug, whisk buttermilk and milk combined. Pour the buttermilk mixture into the center of the dry mixture. Gently stir until just combined. Transfer the dough onto a floured surface and gently shape it into a round. Cut the dough in half, then each half into 8 wedges.
  • Roll the dough wedges into balls, lightly dusting with extra flour to avoid sticking. Place the balls in 2 concentric circles on the tray, ensuring they are touching.
  • Gently coat the dough with additional melted butter and generously sprinkle with the seed mixture. Bake for about 30 minutes, or until beautifully golden and puffed. Allow to cool briefly before serving warm.
