Nutritious biscuits ideal for snacking or pairing with cheese.
Ingredients:
  • 100.00 gm traditional rolled oats
  • 165.00 ml wholemeal flour
  • 1.20 gm salt
  • 0.63 gm bicarbonate of soda
  • 90g butter, diced
  • 2 egg whites
  • 24.00 gm sesame seeds
  • 20.00 ml chia seeds
  • 2 tsp poppy seeds
  • 1 tsp caraway seeds
  • 40.00 ml pepitas
Instructions:
  • Prepare 2 large baking trays by lining them with baking paper.
  • Pulse oats in a food processor until fine. Add flour, salt, and bicarbonate of soda. While the processor is running, add butter until the mixture looks like breadcrumbs. Keep the processor running and add egg whites, sesame, chia, poppy, and caraway seeds. Pulse until the mixture just comes together. Transfer mixture to a floured surface and knead in pepitas.
  • Divide the mixture in half and roll each piece into a 20cm circle between floured baking paper. Then place the circles on the prepared trays.
  • Preheat the oven to 200C (180C fan-forced), cut each circle into 8 wedges, then bake for 15 minutes and let cool on the tray.
