Whip up delicious nutty oatmeal cookies in a flash!
Ingredients:
  • 1 cup shortening
  • 0.5 cup packed brown sugar
  • 1.5 cups quick cooking oats
  • 0.75 cup finely chopped walnuts
  • 1.5 cups all-purpose flour
Instructions:
  • Blend the shortening, white sugar, and brown sugar until creamy, then incorporate the beaten egg.
  • Combine the flour, baking soda, and ground cinnamon before adding them to the mixture. Then mix in the quick rolled oats, finely crushed walnuts or pecans, and vanilla.
  • Refrigerate for an hour until cold.
  • Preheat oven to 350°F (175°C).
  • Drop walnut-sized portions of dough onto a greased cookie sheet. Use a small buttered glass dipped in sugar to gently flatten each piece. No need to reapply butter each time. Bake for 10 minutes.
