Elevate your classic chicken and mashed potatoes with flavorful semi-dried tomatoes from the deli for a tangy twist.
Ingredients:
  • 4 (170g each) chicken breast fillets
  • 62.50 ml loosely packed fresh basil leaves
  • 80g semi-dried tomato
  • 1/2 x 220g tub bocconcini cheese, drained, sliced
  • 8 slices prosciutto
  • 1 tsp chicken style stock powder
  • 1kg desiree potatoes, peeled, chopped
  • 2 garlic cloves, peeled
  • 40g butter
  • 84.98 gm milk, warmed
  • Steamed broccolini, to serve
Instructions:
  • 1. Preheat your oven to 180°C/160°C fan-forced. 2. Line a baking tray with baking paper. 3. Use a sharp knife to make a deep cut along one side of each chicken breast, creating a large pocket without cutting all the way through. 4. Stuff each pocket with 3 basil leaves, 4 semi-dried tomatoes, and 4 pieces of bocconcini. 5. Wrap each breast with 2 slices of prosciutto.
  • 1. Heat oil in a large frying pan until shimmering. Add chicken and sear for 3 minutes on each side until golden brown. Transfer to a baking tray and bake for 25-30 minutes until fully cooked. 2. Add stock paste and 2/3 cup cold water to the same pan. Cook for 5 minutes, stirring and scraping the bottom until the sauce is reduced by half.
  • In a large saucepan, add potatoes and garlic, covering them with cold water. Bring to a boil over high heat and cook for 12 to 15 minutes until the potatoes are tender. Drain the water and return the potatoes and garlic to the pan. Add butter and milk, then mash until smooth.
  • Present the chicken alongside creamy mashed potatoes, tender broccolini, and a generous drizzle of the flavorful pan juices. Season with freshly cracked black pepper for the perfect finishing touch.
