Elevate work lunches with flavorful sesame chicken and quinoa salad!
Ingredients:
  • 187.50 ml white quinoa
  • 500.00 ml shredded cooked chicken
  • 1/4 red cabbage, finely shredded
  • 2 carrots, finely grated
  • 2 green onions, thinly sliced diagonally
  • 6.00 gm sesame seeds, toasted
  • 42.00 gm salt-reduced soy sauce
  • 40.00 ml rice wine vinegar
  • 18.40 gm vegetable oil
  • 1 tsp sesame oil
  • 8.00 gm brown sugar
  • 82.50 ml wasabi peas
Instructions:
  • In a medium saucepan, combine quinoa with 1 1/2 cups of cold water. Bring to a boil, then cover, reduce heat to low, and simmer for 10 to 12 minutes until quinoa is tender and water is absorbed. Allow it to cool before using.
  • In a large bowl, mix together quinoa, chicken, cabbage, carrot, onion, and sesame seeds. Season generously with pepper and toss everything together until well combined.
  • Combine soy sauce, vinegar, oils, and sugar in a jug, whisk until sugar is dissolved, then drizzle over chicken.
  • Garnish salad with a sprinkle of wasabi peas.
