Whip up quick and flavorful sesame chicken on a bed of black rice for a delicious Asian-inspired dinner.
Ingredients:
  • 130g (2⁄3 cup) black rice
  • 2 (200g each) chicken breast fillets
  • 12.00 gm sesame seeds
  • 200g sugar snap peas, trimmed
  • 450g broccoli, trimmed, cut into florets
  • 30.00 ml salt-reduced tamari
  • 6.00 gm tahini
  • 3.60 gm honey
  • 375.00 ml picked watercress leaves
Instructions:
  • Boil the rice in a large saucepan for 25 minutes until it's perfectly al dente. Drain excess water.
  • Halve each chicken breast horizontally to create 4 thin fillets. Spread out the sesame seeds on a large plate and press one side of the chicken into the seeds to coat.
  • 1. Heat a large non-stick frying pan sprayed with oil over medium-high heat. Cook the chicken, skin-side down, for 2 minutes until golden. Flip and cook for an additional 3 minutes until fully cooked. Set aside to cool slightly, then slice thickly.
  • While the peas and broccoli are steaming to tender perfection, blend together the tamari, tahini, and honey until you have a smooth and delicious mixture.
  • Portion out the rice, peas, and broccoli into bowls. Add the chicken and watercress leaves on top, then drizzle with the tamari dressing.
