15 Minute Healthy Portuguese Chicken with Black Rice Salad - Perfect for a Quick Weeknight Dinner!
Ingredients:
  • 2 x 250g pkts Microwavable Black Rice
  • 150g snow peas, trimmed
  • 150g sugar snap peas, trimmed
  • 1/2 red onion, thinly sliced
  • 1 red capsicum, seeded, thinly sliced
  • 1 Portuguese Hot Roast Chicken
  • 60ml lemon juice
  • 36.40 gm olive oil
  • 1 garlic clove, crushed
  • 2.50 gm smoked paprika
  • Coriander leaves, to serve
Instructions:
  • Cook the rice according to the instructions on the packet.
  • Cook snow peas and sugar snap peas in boiling water for 2-3 mins until bright green and crisp-tender. Then, cool them under cold water, drain, and halve them.
  • In a large bowl, mix together rice, snow peas, onion, and capsicum. Season with your favorite spices. Transfer the mixture to a serving platter.
  • Portion the chicken and place it on top of the rice mixture. Mix lemon juice, oil, garlic, and paprika in a small bowl. Pour the lemon juice mixture over the chicken. Garnish with fresh coriander leaves before serving.
