Elevate family dinner with a unique twist: chicken and veggies.
Ingredients:
  • 400g orange sweet potato (kumara)
  • 4 (about 420g) parsnips
  • Salt & freshly ground black pepper
  • 3 15g pkts sesame seeds
  • 4 (about 200g each) single chicken breast fillets
  • 420g green beans, topped
  • 85g (1/3 cup) Delikatess mayonnaise (Thomy Brand)
  • 21.00 gm fresh lemon juice
Instructions:
  • Preheat your oven to 220°C and prepare 2 large baking trays by lining them with baking paper.
  • Slice the sweet potato and parsnip into 1.5cm-thick slices. Combine them with oil in a large bowl, season with salt and pepper, and mix well. Spread the vegetables in a single layer on a lined tray. Roast in a preheated oven for 10 minutes.
  • Toast sesame seeds in a non-stick pan over medium heat, stirring often, until golden, about 5 minutes. Transfer to a plate or baking paper. Press chicken fillets onto seeds to coat evenly. Arrange coated chicken on prepared tray.
  • Bake the coated chicken on the same tray as the vegetables for an additional 15 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Cook the green beans in boiling salted water for 2-3 minutes until tender crisp, then drain. Mix mayonnaise, lemon juice, salt, and pepper in a small bowl.
  • Slice the chicken into thick pieces. Serve promptly with roasted vegetables, green beans, and a generous drizzle of lemon mayonnaise.
