Elevate soba noodles and vegetables with a flavorful Asian dressing of sesame oil, ginger, soy sauce, rice vinegar, and garlic.
Ingredients:
  • 3 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 1 tablespoon balsamic or rice vinegar
  • 1 tablespoon sesame oil
  • 4 1/2 teaspoons sugar
  • 1 1/2 teaspoons grated gingerroot
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon ground red pepper (cayenne)
  • 8 to 9 oz uncooked soba (buckwheat) noodles or angel hair pasta
  • 2 medium carrots, shredded (1 cup)
  • 1 small cucumber, cut lengthwise in half, then cut crosswise into thin slices (1 cup)
  • 2 medium green onions, thinly sliced (2 tablespoons)
  • 1 tablespoon sesame seed, toasted
Instructions:
  • Combine all dressing ingredients in a small bowl and mix until well combined; set aside.
  • Heat 2 quarts of water in a 4-quart Dutch oven until boiling. Cook soba noodles for 6 to 8 minutes until tender, then drain and rinse with cold water. If using angel hair pasta, cook according to package instructions, then drain and rinse with cold water.
  • Combine the noodles, dressing, and remaining salad ingredients in a large serving bowl. Chill in the refrigerator until ready to serve.
