Ingredients:
  • 270g packet soba noodles
  • 24.00 gm sesame seeds
  • 36.80 gm vegetable oil
  • 3 green onions, trimmed, thinly sliced
  • 200g cup mushrooms, sliced
  • 200g portobello mushrooms, sliced
  • 1 bunch asparagus, sliced diagonally into 6cm lengths
  • 300g packet sweet chilli tofu (see note)
  • 100g enoki mushrooms, stalks trimmed
  • 42.00 gm soy sauce
  • 20.00 ml rice wine vinegar
  • 1cm piece ginger, peeled, finely grated
  • 1 tsp sesame oil
Instructions:
  • Boil noodles in a large saucepan for 4 minutes. Drain, rinse with warm water, and transfer to a large bowl.
  • Toast sesame seeds in a heated frying pan over medium heat, shaking often, until golden (1 to 2 minutes). Transfer to a jug and set aside.
  • Heat 1 tablespoon of vegetable oil in a pan over medium-high heat. Add onions, sliced mushrooms, portobello mushrooms, and asparagus. Cook for 3 to 4 minutes until vegetables are just tender. Add tofu and enoki mushrooms, and cook for 1 to 2 minutes until warmed through. Remove from heat and enjoy!
  • Combine soy sauce, rice wine vinegar, ginger, sesame oil, and the rest of the vegetable oil with sesame seeds. Whisk to blend. Season with white pepper. Mix mushroom mixture and soy dressing with noodles. Gently toss to combine. Serve warm or chilled.
