Crunchy cucumber and asparagus paired with sesame noodles for a velvety side dish.
Ingredients:
  • 270g packet soba noodles
  • 1 bunch asparagus, thinly sliced diagonally
  • 200g packet Japanese teriyaki tofu
  • 1 Lebanese cucumber, halved lengthways, seeded, thinly sliced diagonally
  • 86.63 gm sushi soy sauce
  • 2 tsp sesame oil
  • 1/4 tsp wasabi paste
  • 12.00 gm sesame seeds, toasted
Instructions:
  • Prepare noodles according to package instructions. Drain and rinse under cold water before transferring to a bowl.
  • Place the asparagus in a heatproof bowl and cover with boiling water. Let it stand for 1 minute until bright green and tender. Drain and rinse the asparagus under cold water.
  • Cube the tofu into 4 equal squares. Combine the tofu, asparagus, and cucumber with the noodles. Whisk together soy sauce, lemon juice, sesame oil, and wasabi paste in a jug. Pour the sauce over the noodle mixture and toss to coat. Garnish with sesame seeds before serving.
