Japanese tofu and soba salad with sesame dressing

Toss salad with sesame dressing for maximum flavor in every bite.
Ingredients:
  • 270g packet buckwheat soba noodles
  • 200g teriyaki tofu, thinly sliced
  • 100g mixed salad leaves
  • 2 avocados, thinly sliced
  • 1 Lebanese cucumber, cut into ribbons
  • 123.75 gm Japanese mayonnaise
  • 24.00 gm tahini
  • 20.00 ml rice wine vinegar
  • 12.00 gm sesame seeds, toasted
Instructions:
  • Prepare noodles according to package instructions until they are tender, then drain.
  • Prepare the Sesame dressing by blending or processing the ingredients in a small food processor until well combined.
  • Combine noodles, tofu, salad leaves, avocado, and cucumber in a bowl. Season with a hint of pepper and gently toss to mix. Serve the salad with a drizzle of dressing.
