Sesame tofu, chicken & miso soup

Ingredients:
  • 300g firm tofu, drained, cut into 1.5cm squares
  • 24.00 gm sesame seeds
  • 2 35g pkts Asian chicken & miso cup-a-soup (Continental brand)
  • 800ml boiling water
  • 1 425g can baby corn (Greenland brand), drained, diagonally sliced
  • 3 spring onion bulbs, cut into quarters
  • 10.60 gm soy sauce
  • 2 spring onion stems, thinly sliced lengthways
Instructions:
  • Preheat the grill on high. Coat the tofu with sesame seeds, then place it on a baking tray. Grill the tofu about 5cm from the heat source for 1-2 minutes until the sesame seeds are toasted. Set aside after grilling.
  • In a medium saucepan over gentle heat, mix the soup powder with boiling water. Stir in the corn, spring onions, and soy sauce. Simmer gently, stirring occasionally, for 2-3 minutes until everything is heated through.
  • When ready to enjoy, pour the flavorful soup into bowls and add a generous serving of sesame tofu and fresh spring onion stems on top.
