Spicy and juicy air fryer meatloaf ready in under an hour for a fuss-free, satisfying dinner.
Ingredients:
  • 0.5 pound ground pork
  • 0.5 pound ground veal
  • 1 large egg
  • 0.25 cup chopped fresh cilantro
  • 0.25 cup gluten-free bread crumbs
  • 2 medium spring onions, diced
  • 0.5 teaspoon Sriracha salt
  • 2 teaspoons gluten-free chipotle chili sauce
  • 1 teaspoon olive oil
  • 1 teaspoon blackstrap molasses
Instructions:
  • Preheat the air fryer to a perfect 400 degrees F (200 degrees C).
  • In a nonstick baking dish that fits inside the air fryer basket, mix pork and veal. Create a well and add egg, cilantro, bread crumbs, spring onions, black pepper, and 1/2 teaspoon of Sriracha salt. Combine thoroughly by hand and shape into a loaf in the baking dish.
  • Mix together the ketchup, chipotle chili sauce, olive oil, and molasses in a small bowl until smooth. Keep at room temperature, do not refrigerate.
  • Air fry the meatloaf undisturbed for 25 minutes. Top it with a generous layer of ketchup mixture, ensuring full coverage. Continue air frying until the internal temperature reaches 160°F (71°C), approximately 7 minutes longer.
  • Allow the meatloaf to rest in the turned-off air fryer for 5 minutes. Then, remove it and let it rest for an additional 5 minutes before slicing and serving.
