Blueberry buns bursting with sweet berries and a hint of cardamom - utterly irresistible!
Ingredients:
  • 7 g packet yeast
  • 375 ml milk warm
  • 1 heaped teaspoon ground cardamom or about 20 cardamom pods
  • 2 large free-range eggs
  • 200 g caster sugar
  • 50 g butter melted
  • 800 g plain flour plus extra for dusting
  • 15 g unsalted butter
  • 75 g demerara sugar
  • 400 g blueberries
  • 75 g caster sugar
  • 1 orange
Instructions:
  • 1. Combine yeast with warm milk in a bowl and set aside. If using cardamom pods, crush them to a fine powder after removing the husks. 2. In a separate large bowl, beat eggs and salt, then add cardamom, sugar, melted butter, 500g flour, and the milk-yeast mixture. Mix until thick and gluey. 3. Gradually mix in the remaining 300g flour to form a dough. Use floured hands to bring it together, then dust the top with flour. Cover with clingfilm and let it prove in a warm place until doubled in size. 4. Meanwhile, mix blueberries, caster sugar, orange zest, and juice in a bowl. 5. Line a baking tray with greaseproof paper and dot with butter and demerara sugar. 6. Stretch the risen dough on a floured surface and top with half the blueberry mixture. 7. Fold the dough over the blueberries, cut into 8 pieces, and shape into knots. 8. Place the knots on the tray, top with remaining blueberries and juice, demerara sugar, and orange zest. Let them rise for 20 minutes. 9. Preheat the oven to 180ºC/350ºF/gas 4, then bake the buns for 25 minutes until golden. 10. Serve the warm buns on their own or with custard. Enjoy!
