Indian bread pudding: Bread slices fried, soaked in condensed milk, baked golden.
Ingredients:
  • 1 quart half-and-half
  • 2 cups white sugar
  • 1 loaf sliced bread, crusts removed, divided
  • oil for frying
Instructions:
  • In a large pot over medium-low heat, let the decadent mix of half-and-half, sugar, and condensed milk come together. Allow it to gently boil and simmer until it reduces by half, approximately 55 minutes.
  • Blend 2 slices of bread into the half-and-half mixture using an immersion blender until thickened.
  • Preheat the oven to 400°F (200°C).
  • In a deep-fryer or large saucepan, warm oil. Fry the rest of the bread slices in batches until they turn golden brown, around 1 minute on each side. Place on paper towels to drain.
  • Cut the bread diagonally and arrange the slices in a 9x12-inch baking dish. Slowly pour the half-and-half mixture over the bread until every slice is perfectly soaked.
  • Bake in the preheated oven until bubbly, for about 20 minutes. Then flip bread slices and bake for an additional 5 minutes.
