Spicy Indian Shami kebab patties made with ground chicken, yellow lentils, and garam masala, pan-fried to perfection.
Ingredients:
  • 1.25 cups yellow lentils
  • 4.25 cups water
  • 1 pound ground chicken
  • 1 onion, diced
  • 4 green chile peppers, finely chopped, or more to taste
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon garam masala
  • 1 tablespoon salt, or more to taste
  • 0.5 bunch cilantro, chopped
  • 2 eggs, beaten
  • 2 tablespoons vegetable oil, or as needed
Instructions:
  • Place the lentils in a container and cover with water, allowing them to soak for at least 30 minutes. Drain before using.
  • In a large pot, mix drained lentils, 4 1/4 cups water, ground chicken, onion, green chile peppers, ginger-garlic paste, garam masala, and salt. Bring to a boil, then simmer until water is mostly absorbed and lentils are soft, about 20-25 minutes.
  • Transfer the lentil mixture to a food processor and pulse until creamy. Mix in fresh cilantro for added flavor.
  • Form the mixture into patties and coat them generously with beaten eggs.
  • In a large skillet over medium heat, sizzle patties in batches until beautifully golden on each side, about 3 minutes per side.
