Flavorful stir-fry in just 10 minutes!
Ingredients:
  • 60ml peanut oil
  • 300g pork mince
  • 4cm piece ginger, cut into matchsticks
  • 150g runner beans, sliced on an angle
  • 1/2 bunch Chinese broccoli, cut into thirds
  • 62.50 ml Chinese cooking wine (shaohsing) (see note)
  • 8.00 gm brown sugar
  • 52.50 gm light soy sauce
  • 30.00 ml Chinese black vinegar (see note)
  • 500g Shanghai noodles (see note), cooked, drained
  • 10 garlic chives (seenote), cut into 3cm lengths
  • Sesame oil, to serve
  • Dried chilli flakes, to serve
Instructions:
  • In a wok or large frypan over medium-high heat, sauté pork and most of the ginger in 1 tablespoon of oil for 4-5 minutes until fully cooked. Set aside the mixture.
  • Heat the rest of the oil in a wok and quickly stir-fry the vegetables. Add back the pork, pour in the wine and toss together. Sprinkle in the sugar, soy sauce, and vinegar, and stir-fry for a minute. Toss in the noodles and most of the chives until everything is heated through. Serve the dish in bowls, drizzle with sesame oil, and top with chili, remaining chives, and ginger before serving.
