Transformed banana bread recipe into tropical muffins with oranges and coconut added for a delicious twist.
Ingredients:
  • 0.5 cup margarine
  • 2 eggs, beaten
  • 1 cup mashed bananas
  • 2 cups all-purpose flour
  • 1 (10 ounce) can mandarin oranges, drained and chopped
  • 0.5 cup shredded coconut
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare your 12 muffin cups with a touch of grease and flour or paper liners.
  • Cream together sugar and margarine in a bowl with an electric mixer until creamy; mix in eggs. Fold in mashed bananas and vanilla extract.
  • In a bowl, whisk together flour, baking powder, and salt. Mix into margarine until just combined. Gently fold in oranges and coconut. Spoon batter into muffin tins.
  • Bake in the preheated oven for 20-30 minutes or until a toothpick inserted in the center of a muffin comes out clean.
