Try delicious oven-baked pumpkin pie spice pancakes for a cozy weekend breakfast treat.
Ingredients:
  • 2 tablespoons white sugar
  • 2 tablespoons brown sugar, divided
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon pumpkin pie spice
  • 1 pinch salt
  • 1 tablespoon butter, cut into large chunks
  • 0.125 teaspoon almond extract
Instructions:
  • Preheat oven to a sizzling 425 degrees F (220 degrees C).
  • Combine white sugar and 1 tablespoon of brown sugar in a small bowl. In another bowl, whisk together flour, cinnamon, pumpkin pie spice, and salt.
  • Place butter in an 8-inch cake pan and let it melt in the preheated oven for 3 to 5 minutes.
  • Evenly scatter the remaining brown sugar over the melted butter in the cake pan.
  • Using an electric mixer, blend eggs, milk, vanilla extract, and almond extract in a large bowl until smooth. Combine with flour mixture to form a smooth batter. Pour over butter and brown sugar in cake pan, then sprinkle white and brown sugar mixture on top.
  • Bake in the oven until perfectly puffed and golden, about 20 to 25 minutes.
