Shaved apple salad recipe

Whip up a speedy shaved apple salad in 20 minutes for a refreshing side dish.
Ingredients:
  • 70.00 ml apple cider vinegar
  • 21.60 gm honey
  • 54.60 gm extra virgin olive oil
  • 6.90 gm walnut oil or macadamia oil
  • 2 Granny Smith apples
  • 2 Jazz apples
  • 1 celery stick, thinly sliced diagonally
  • 50g walnut
  • 30.00 ml coarsely chopped tarragon
  • Tender inner celery leaves, to serve (optional)
  • 100g piece manchego cheese
Instructions:
  • Whisk together vinegar and honey in a medium bowl until blended. Slowly drizzle in the oil while whisking continuously until fully combined. Season the vinaigrette with salt to taste.
  • Thinly slice the apples using a mandolin or vegetable slicer, ensuring to avoid and discard the cores before serving.
  • On each of 8 plates, artistically arrange apple slices, celery, walnuts, and tarragon in the center, alternating apple varieties. If desired, garnish with celery leaves.
  • Finely shave manchego over salads using a vegetable peeler. Drizzle with vinaigrette, sprinkle with salt, and serve promptly.
