Wholesome vegetable and feta salad, a simple make-ahead dish that's gluten-free and nutritious.
Ingredients:
  • 2 radicchio or treviso lettuces, outer leaves removed, bases trimmed, finely shredded
  • 2 baby fennel bulbs, halved, thinly sliced
  • 1 small red onion, halved, thinly sliced
  • 125.00 ml parsley leaves, coarsely chopped
  • 27.30 gm olive oil
  • 21.00 gm fresh lemon juice
  • 75g Persian feta, crumbled
Instructions:
  • Mix the radicchio, fennel, onion, and parsley in a bowl.
  • Combine the oil and lemon juice in a small jug and whisk until well blended.
  • Combine the dressing and feta with the salad, gently mix until combined. Season generously with salt and pepper. Serve in a serving dish.
