Delicious sheet pan chicken with flavorful feta, sweet peppers, and savory onions. Serve with rice or in pita.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 pounds boneless chicken breast cut into 1-inch cubes
  • 12 ounces mini bell peppers, halved lengthwise and seeded
  • 1 medium white onion, quartered
  • 0.5 cup Italian-style salad dressing
  • 6 ounces crumbled feta cheese
  • 2 teaspoons dried oregano
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly oil a sheet pan to prepare for baking.
  • Evenly arrange chicken, peppers, and onion on the sheet pan. Sprinkle with zesty Italian dressing, tangy feta cheese, and fragrant oregano; gently mix together.
  • Roast the chicken in the oven until fully cooked and the juices run clear, for 20-25 minutes, or until a thermometer reads 165 degrees F (74 degrees C) when inserted into the thickest part of the breast.
