Sheet pan Spanish chorizo dinner with potatoes and veggies for two - quick, flavorful, and effortless!
Ingredients:
  • 0.5 pound baby red potatoes, halved
  • 1 cup baby carrots
  • 3 tablespoons olive oil, divided
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon smoked paprika
  • 2 links chorizo sausage
  • 1 red onion, quartered
  • 0.25 bunch fresh asparagus, trimmed
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfectly heated cooking environment.
  • Spread the potatoes and carrots on a baking sheet, drizzle with 2 tablespoons of olive oil, and sprinkle with salt, black pepper, garlic powder, and smoked paprika. Toss to ensure everything is evenly coated, then nestle the chorizo sausages on top.
  • Roast in the oven until sausages turn golden brown, for approximately 15 minutes.
  • Slice the sausages into rounds. Add red onion and asparagus to the sheet pan with the sausage slices. Drizzle everything with the remaining olive oil and toss to coat.
  • Continue baking in the preheated oven until the vegetables turn golden and roast, for approximately 15 more minutes.
