Whip up a speedy one-pan meal of zesty lemon butter shrimp and garlic asparagus in just 30 minutes.
Ingredients:
  • cooking spray
  • 1 pound fresh asparagus, trimmed
  • 2 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • salt, divided
  • 1 pinch ground black pepper, divided
  • 1.5 pounds uncooked medium shrimp, peeled and deveined
  • 1 teaspoon paprika
  • 3 tablespoons butter, cubed
  • 3 tablespoons lemon juice
Instructions:
  • Preheat your oven to 400°F (200°C). Prepare a 9x12-inch baking pan by lining it with parchment paper and greasing it with cooking spray.
  • Place the asparagus on the baking pan and generously drizzle with 1 tablespoon of flavorful olive oil. Sprinkle with aromatic garlic, 1 teaspoon of salt, and a hint of 1/2 teaspoon pepper. Gently toss until perfectly coated and arrange the asparagus in a tempting single layer.
  • Cook in the preheated oven until just starting to soften, approximately 6 minutes.
  • Take out the pan from the oven and arrange the shrimp on one side. Drizzle the remaining 1 tablespoon of olive oil, 1 teaspoon of salt, 1/2 teaspoon of pepper, and smoked paprika over the shrimp; toss to coat evenly. Place the shrimp in a single layer beside the asparagus. Place cubed butter on top of the asparagus and shrimp.
  • Roast in the hot oven until the shrimp turns opaque, approximately 6 minutes.
  • Drizzle lemon juice over pan once removed from the oven.
