Savor a vibrant ratatouille with fresh seasonal veggies like squash, eggplants, bell peppers, and tomatoes. Effortlessly roast in the oven for a hassle-free meal.
Ingredients:
  • Nonstick cooking spray
  • 1 large (about 1 1/2 pounds) eggplant, trimmed and cut into 1-inch chunks
  • 2 medium summer squash (1 yellow and 1 zucchini), cut into 1-inch chunks
  • 1 red bell pepper, cored and cut into 1-inch chunks
  • 1 medium sweet onion, cut into 1-inch chunks
  • 6 cloves garlic, finely chopped
  • 1 teaspoon Aleppo pepper or crushed red pepper flakes
  • 2 cups grape or cherry tomatoes, halved
  • 2 tablespoons chopped fresh basil, parsley, or chives
  • 1/2 teaspoon freshly ground black pepper, plus more to taste
  • 3/4 teaspoon kosher salt, plus more to taste
  • Extra virgin olive oil, for serving
Instructions:
  • Preheat the oven to 425°F and position racks in the upper and lower thirds. Line two rimmed sheet pans with silicone baking mats or foil, then generously spray with cooking spray. Set aside.
  • Prepare the veggies: Combine eggplant, summer squash, bell pepper, onion, garlic, and Aleppo pepper in a large bowl. Mix well. Spread the veggies evenly on two sheet pans. Give them a hearty spritz of nonstick cooking spray. Add black pepper for flavor, but avoid salt to prevent excess moisture while cooking.
  • Roast the vegetables on sheet pans, rotating them halfway through, until they are golden brown and tender, for about 45 minutes.
  • Combine the tomatoes and basil with the roasted vegetables, seasoning with 1/2 teaspoon salt.
  • Taste and adjust seasoning with salt and black pepper. For a more luxurious texture, add a drizzle of olive oil or serve it on the side for drizzling. Serve hot, at room temperature, or chilled.
