Try this quick and convenient microwave meatloaf recipe for a fuss-free meal and a cool kitchen.
Ingredients:
  • 1 (8 ounce) can tomato sauce
  • 0.25 cup brown sugar
  • 1 teaspoon prepared mustard
  • 1 medium onion, minced
  • 0.5 cup saltine cracker crumbs
  • 0.25 cup minced green bell pepper
  • 2 large eggs, lightly beaten
  • 0.25 teaspoon garlic powder
  • 2 pounds extra lean ground beef
Instructions:
  • Combine tomato sauce, brown sugar, and mustard in a bowl, mixing well until the sugar dissolves.
  • Combine onion, cracker crumbs, bell pepper, eggs, salt, pepper, and garlic powder in a large mixing bowl until fully mixed. Add ground beef and half of the tomato sauce mixture; mix well. Transfer to a 2-quart microwave-safe baking dish and spread the remaining tomato sauce mixture over the top.
  • Microwave on high for 10 to 15 minutes until the loaf is fully cooked and reaches an internal temperature of 165 degrees F (75 degrees C). Let stand for a few minutes before slicing.
  • Once heated in the microwave, promptly remove and drain any excess grease from the dish. Allow to stand uncovered for 10 to 15 minutes before serving.
