Whip up an easy, cheesy shepherd's pie for a satisfying dinner.
Ingredients:
  • 1 carrot, peeled, finely chopped
  • 500g lamb mince
  • 2 zucchini, trimmed, finely chopped
  • 40.00 ml plain flour
  • 500ml (2 cups) beef stock
  • 125g (1/2 cup) passata (tomato pasta sauce)
  • 36.60 gm Worcestershire sauce
  • 2 dried bay leaves
  • 850g potatoes, peeled, chopped
  • 125ml (1/2 cup) milk
  • 30g butter, chopped
  • 115g (1 1/3 cups) coarsely grated cheddar
Instructions:
  • In a large saucepan, heat oil over medium-high heat. Sauté onion and carrot until tender, about 1 minute. Increase heat to high, add mince, and cook for 5 minutes or until browned, breaking up lumps with a wooden spoon. Stir in zucchini and flour, cook for 1 minute. Slowly pour in stock while stirring constantly. Mix in passata, Worcestershire sauce, and bay leaves. Reduce heat to medium and simmer for 15 minutes until thickened.
  • Simmer the potato in boiling water for 12 minutes until tender. Drain, then return to the pan and mash until smooth. Mix in the milk and butter, and season with salt and white pepper to taste.
  • Preheat the grill to high. Divide the lamb mixture evenly among four 375ml (1 1/2-cup) capacity ovenproof dishes. Top with mash and cheddar, then grill for 3 minutes until golden and the cheddar is melted.
