Shepherd's Pie

Savory ground beef topped with cheesy mashed potatoes for a crowd-pleasing Shepherd's Pie casserole.
Ingredients:
  • 4 large potatoes, peeled and cubed
  • 1 tablespoon butter
  • 1 tablespoon finely chopped onion
  • 0.25 cup shredded Cheddar cheese
  • salt and pepper to taste
  • 5 carrots, chopped
  • 1 tablespoon vegetable oil
  • 1 pound lean ground beef
  • 2 tablespoons all-purpose flour
  • 1 tablespoon ketchup
  • 0.75 cup beef broth
Instructions:
  • Collect all of your ingredients.
  • 1. Boil a generous amount of salted water in a large pot. Cook the potatoes until tender but slightly firm, which should take around 15 minutes. Drain the potatoes and mash them. Combine with butter, finely chopped onion, and 1/4 cup of shredded cheese. Season with salt and pepper to your liking and set aside.
  • - Boil a large pot of salted water until bubbling. Cook carrots until tender but slightly firm for around 15 minutes. Drain, mash, and set aside. Preheat oven to 375°F (190°C).
  • In a large frying pan, heat oil until shimmering. Sauté onion until translucent. Brown ground beef and drain excess fat. Stir in flour and cook for 1 minute. Pour in ketchup and beef broth, bring to a boil, then simmer for 5 minutes.
  • Evenly layer the ground beef on the bottom of a 2 quart casserole dish. Follow with a layer of mashed carrots, top with mashed potato mixture and finish with a sprinkle of remaining shredded cheese.
  • Place in the oven already heated to the desired temperature, and bake for 20 minutes, or until a lovely golden brown color is achieved. Serve immediately while hot and savor every bite!
