Elevate classic shepherd's pie with a Midwestern twist: ground beef mixed with peas, carrots, and corn, topped with crispy Tater Tots®, seasoned with rosemary and Worcestershire sauce.
Ingredients:
  • 1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
  • 4 tablespoons butter
  • 1 cup finely chopped onion
  • 1 cup finely chopped celery
  • 1 tablespoon garlic, minced
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 (14.5 ounce) can peas and carrots, drained
  • 1 (14 ounce) can whole kernel corn
  • 2 pounds ground beef
  • 2 teaspoons Worcestershire sauce
  • 1 (8 ounce) package shredded sharp Cheddar cheese
Instructions:
  • Preheat the oven to a piping hot 450 degrees F (230 degrees C) and lay out the potato nuggets in a single, crispy layer on an 11x17-inch baking sheet.
  • Place in a hot oven and bake for 15 minutes.
  • Preheat oven to a cozy 350°F (175°C) and generously grease a 9x13-inch casserole dish.
  • In a stockpot or braising pan, melt butter over low heat. Stir in onion, celery, garlic, rosemary, thyme, salt, and pepper. Increase heat to medium-low and cook for 15 minutes, stirring occasionally. Then, reduce heat to low and add peas, carrots, and corn. Keep stirring occasionally.
  • Preheat a large skillet over medium heat. Brown and crumble the ground beef for 5 to 7 minutes. Drain excess fat. Transfer beef to a stockpot. Stir in Worcestershire sauce, then transfer mixture to a casserole dish and top with potato nuggets.
  • Bake in the preheated oven for 30 minutes, rotating halfway through. Sprinkle cheese on top and bake for an additional 15 minutes until cheese is melted.
