Zesty lemon cut-out cookies with irresistible frosting.
Ingredients:
  • 1 cup margarine
  • 1 cup shortening
  • 1 cup white sugar
  • 1 cup confectioners' sugar
  • 2 eggs
  • 1 teaspoon lemon juice
  • 4.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon salt
  • 3 cups confectioners' sugar
  • 0.25 cup margarine, softened
  • 1.5 teaspoons lemon juice
  • 3 tablespoons milk
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease your cookie sheets.
  • Cream 1 cup margarine, shortening, white sugar, and 1 cup confectioners' sugar in a large bowl until smooth. Add eggs one at a time, then mix in 1 teaspoon lemon juice. Gradually incorporate flour, baking soda, cream of tartar, and salt into the mixture. Roll out the dough to 1/4 inch thick on a lightly floured surface. Use cookie cutters to shape the dough as desired. Space cookies 1 1/2 inches apart on prepared cookie sheets.
  • Bake in the preheated oven for 8 to 10 minutes. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  • In a medium bowl, blend 3 cups of confectioners' sugar, 1/4 cup of margarine, and 1 1/2 teaspoons of lemon juice until smooth. Gradually add milk, 1 tablespoon at a time, until the frosting reaches your desired consistency.
