Mexican-inspired shredded chicken tacos simmered in Shiner® Bock and fajita seasoning, a delightful dish.
Ingredients:
  • 1 whole chicken
  • 2 tablespoons chicken fajita seasoning
  • 1 tablespoon cayenne pepper
  • 2 cups water, or more as needed
  • 1 (12 fluid ounce) can or bottle beer (such as Shiner® Bock)
  • 1 (16 ounce) can enchilada sauce (such as El Paso® Hot Red Enchilada Sauce)
  • 3 fresh jalapeno peppers, diced
  • 1 white onion, chopped
  • 1 (10 ounce) package corn tortillas, or as needed
  • 1 (8 ounce) package shredded Mexican cheese blend, or to taste
Instructions:
  • In a large pot, generously season chicken with fajita seasoning and cayenne pepper. Pour in water and beer. Simmer over medium heat until chicken is tender and fully cooked, about 1 hour, adding extra water if needed. Check with a meat thermometer for an internal temperature of 165°F (74°C). Remove chicken from broth and set aside to cool slightly, keeping the broth for later use.
  • In a large saucepan over medium-low heat, simmer enchilada sauce, jalapeno peppers, onion, and 1/4 cup chicken broth for 10 minutes until the onions are softened.
  • Shred the chicken meat and mix it thoroughly into the enchilada sauce.
  • Heat up tortillas on a grill pan over gentle heat. Fill each corn tortilla with chicken mixture and sprinkle with Mexican cheese blend.
