Southwestern drunken pinto beans featuring Texas' beloved Shiner Bock® beer.
Ingredients:
  • 1 pound dried pinto beans
  • 0.5 pound bacon
  • 0.5 teaspoon garlic powder
  • 1 (12 fluid ounce) bottle dark lager-style beer (such as Shiner Bock®)
  • 1 bunch cilantro, chopped
  • 1 bunch green onions, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 1 fresh jalapeno pepper
Instructions:
  • In a large container, generously cover pinto beans with cool water. Allow beans to soak for 8 hours or overnight.
  • Fry bacon in a large skillet over medium-high heat until crispy, for approximately 10 minutes. Place the cooked bacon on a paper towel-lined plate to drain, saving the bacon drippings. Finally, chop the bacon.
  • Prepare the pinto beans by draining and rinsing them, then move them to a large pot. Cover the beans with water, stir in salt and garlic powder, and bring to a boil. Lower the heat to medium-low. Mix in bacon, bacon drippings, beer, cilantro, green onions, diced tomatoes, and jalapeno pepper. Let the mixture simmer until the beans are tender, which should take 90 minutes to 2 hours.
