Blackened barbecued pork fillets

A flavorful and irresistible recipe inspired by the bold and dynamic flavors of the Deep South. Experience the essence of Texas with this dish that will leave you craving for more, becoming a yearly favorite.
Ingredients:
  • ½ teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 2 cloves
  • 1 heaped tablespoon sweet smoked paprika
  • 1 orange
  • ½ a bunch of fresh thyme
  • 4 cloves of garlic
  • 150 ml Heinz organic tomato ketchup
  • 6 tablespoons balsamic vinegar
  • 4 x 400 g higher-welfare pork fillets
  • a few sprigs of fresh coriander optional
  • 1 lemon optional
Instructions:
  • For the marinade, combine crushed cumin, fennel seeds, and cloves with paprika in a bowl. Add grated orange zest, orange juice, finely chopped thyme, garlic, ketchup, and balsamic vinegar. Mix well. Season pork fillets with salt and pepper, then coat with most of the marinade. Marinate for at least 1 hour. Skewer fillets and grill for 15-20 minutes, brushing with marinade. Rest for 5 minutes, then slice. Top with chopped coriander and lemon juice before serving.
