Spicy blackened fish cooked in a sizzling cast iron pan for a charred, flavorful finish.
Ingredients:
  • 1 tablespoon paprika
  • 2 teaspoons dry mustard
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 teaspoon white pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 cup unsalted butter, melted, divided
  • 6 (4 ounce) fillets trout
Instructions:
  • Combine paprika, dry mustard, cayenne pepper, cumin, black pepper, white pepper, thyme, and salt in a small bowl and mix well.
  • Preheat a heavy cast iron pan over high heat until sizzling hot, approximately 10 minutes.
  • As the pan heats up, transfer 3/4 cup of melted butter into a shallow dish. Dip each fillet into the butter, making sure both sides are coated. Sprinkle the spice mixture on both sides of the fillets and gently press it onto the fish.
  • In batches, add fillets to the hot pan with space in between. Drizzle each fillet with 1 teaspoon melted butter. Cook until the bottom is charred, around 2 minutes. Flip fillets and spoon another 1 teaspoon melted butter over each. Cook until the bottom is charred, 1 to 2 minutes. Repeat for the rest of the fillets.
