Succulent blackened steak bites sizzle in a cast iron skillet, served with a savory blue cheese sauce - the perfect appetizer.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1.5 pounds beef top sirloin, trimmed and cut into bite-size pieces
  • 2 tablespoons blackened seasoning (such as Chef Paul Prudhomme's® Blackened Steak Magic®), or more to taste
  • 1 (3 ounce) package cream cheese
  • 3 tablespoons evaporated milk
  • 8 ounces blue cheese crumbles
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground white pepper
  • 0.25 teaspoon cayenne pepper
Instructions:
  • Heat up the outdoor grill until it reaches a medium-high temperature.
  • Coat beef evenly with flavorful blackened seasoning.
  • Preheat a cast iron skillet on the grill until it's nice and hot. Cook beef in the sizzling oil in small batches until it forms a light crust, about 1 to 2 minutes per side. Ensure it's cooked to medium doneness by checking with a meat thermometer for a reading of 140°F (60°C). Plate the beef and serve.
  • In a saucepan over low heat, melt cream cheese with evaporated milk. Add blue cheese crumbles, garlic powder, white pepper, and cayenne pepper. Simmer and stir frequently until smooth, about 2-3 minutes.
  • Drizzle beef with luxurious blue cheese sauce before serving.
