Mahi Mahi y Mango Salsa

Blackened mahi mahi steaks topped with a tangy mango and pineapple salsa.
Ingredients:
  • 2 tablespoons olive oil
  • 0.25 cup diced onion
  • 1 mango, diced
  • 0.5 (15 ounce) can pineapple chunks, drained
  • 0.25 cup red wine
  • 4 (4 ounce) mahi mahi steaks
  • 0.25 cup blackening seasoning
Instructions:
  • In a large skillet over medium heat, warm 2 tablespoons of olive oil. Sauté the onion in the oil until slightly softened, about 3 minutes. Add brown sugar and stir until dissolved, around 1 minute. Incorporate mango, pineapple, and red wine, simmer until heated through for 3 to 5 minutes. Place the mixture into a bowl and return the skillet to the stove.
  • In a skillet, warm 2 tablespoons of olive oil. Season mahi mahi steaks with salt, black pepper, and coat them fully with blackening seasoning. Cook the steaks in the hot oil until they flake easily with a fork, about 3 to 4 minutes per side. Serve the steaks on a plate and generously top them with mango salsa.
