Ingredients:
  • 500g fresh Mahi Mahi (dolphin fish), skinned, boned and blood line removed
  • 5g lemon pepper
  • 5g ground sea salt
  • 1-2.50 gm butter
  • 1 fresh lemon, cut into quarters
  • 2 fresh basil leaves, finely chopped
  • 1 fresh mint leaf, finely chopped
Instructions:
  • Cut the fish to your desired size for serving (refer to Notes).
  • Combine lemon pepper and ground sea salt in a bowl, ensuring they are mixed thoroughly. Coat both sides of the fish in the seasoning mix for a light covering, then shake off any extra.
  • Heat butter in a frying pan over medium heat until melted and sizzling, then add fish to the pan.
  • Flip the fish in the pan once the flesh is cooked halfway through and starts to turn white, which should only take 1 - 1 1/2 minutes. Then, turn the fish over, turn off the heat, and let it sit for 1 minute before removing it from the pan. Garnish with a squeeze of lemon juice and a sprinkle of fresh basil and mint. Enjoy!
