Mahi Mahi pot pie: flaky crust with fish and veggies.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1.5 pounds mahi mahi fillets
  • 1 teaspoon dried thyme
  • salt and ground black pepper to taste
  • 1 (10.75 ounce) can condensed cream of potato soup
  • 1 (15 ounce) can mixed vegetables (with potatoes), drained
  • 2 (9 inch) deep dish pie crusts
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect baking temperature.
  • In a large skillet, warm the vegetable oil over medium heat.
  • Season the mahi mahi fillets generously with thyme, salt, and black pepper. Place the seasoned fillets in a hot skillet, cover, and cook for 7 minutes. Flip the fillets and cook for an additional 5-7 minutes until easily flaked with a fork.
  • Transfer the fresh mahi mahi to a cutting board. Cut it into bite-size pieces while being careful to remove any visible bones.
  • Combine the cream of potato soup, milk, and mixed vegetables in a saucepan over medium heat. Season with salt and pepper and simmer for 5 minutes, stirring occasionally.
  • Incorporate the mahi mahi pieces into the soup mixture with care.
  • Place one of the pie crusts into a 9-inch deep-dish pie plate.
  • Pour the mahi mahi soup mixture into the pie crust.
  • Place the remaining pie crust on top of the assembled pie, then seal the edges using moistened fingertips.
  • Bake in the preheated oven for 40-45 minutes until the crust is golden brown and the pie is heated through. Let it cool for 10-15 minutes before serving.
