Spongy South African pudding with creamy topping, known for its rich flavor. Enjoy hot or cold.
Ingredients:
  • 2 tablespoons butter
  • 1 teaspoon white vinegar
  • 0.5 cup milk
  • 1 cup superfine sugar
  • 2 eggs
  • 1 tablespoon apricot jelly
  • 1.3333333730698 cups cake flour
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup heavy cream
  • 0.5 cup butter
  • 0.5 cup white sugar
  • 0.5 cup water, orange juice, or sherry
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Melt 2 tablespoons of butter or margarine with vinegar and milk in a saucepan over low heat, then set aside. In another bowl, sift together flour, baking soda, and salt.
  • Use an electric mixer to whip 1 cup of sugar and eggs until fluffy and light, approximately 5 minutes. Slowly incorporate the apricot jam. Gently fold in the dry ingredients and warmed milk mixture alternately using a spatula. Pour the batter into a greased 1 quart oven-proof dish.
  • Bake for around 45 minutes, or until a knife inserted in the center comes out clean.
  • Combine cream, butter, 1/2 cup sugar, and water in a saucepan over moderate heat. Stir until butter melts and sugar dissolves, being careful not to let it boil.
  • After baking the pudding, create small holes with a skewer or fork and pour the warm cream mixture over it. Enjoy the pudding hot or cold.
