Delicious pulled pork and sauerkraut with caramelized onions, sweet brown sugar, and tender apples, perfect for entertaining with a buffet spread.
Ingredients:
  • 0.25 cup bacon grease
  • 2 (32 ounce) packages sauerkraut, drained and rinsed
  • 2 apples - peeled, cored, and chopped
  • 1 (16 ounce) can chicken broth
  • 0.5 cup brown sugar
  • 0.75 teaspoon mustard powder
  • 1 (3 pound) bone-in pork loin roast
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • In a large skillet over medium heat, sizzle bacon grease until it glistens. Toss in onions and sauté until they turn translucent, approximately 5 minutes.
  • Place sauerkraut and apples in a spacious roasting pan. Add cooked onions and the savory bacon grease from the skillet on top.
  • Combine chicken broth, brown sugar, and mustard powder in a microwave-safe bowl. Microwave on high for 2 minutes until sugar dissolves and broth is heated through. Stir well and pour over sauerkraut, mixing to combine.
  • Make deep slits in the pork loin and nestle it into the sauerkraut mixture. Cover the roasting pan with foil.
  • Roast in the preheated oven for 1 hour until heated through. Lower the oven temperature to 250 degrees F (121 degrees C) and continue roasting for 2 to 3 hours until pork is tender and easily pulls apart. Remove from the oven and let cool for about 15 minutes before handling.
  • Separate pork bones, pull apart the meat with 2 forks, and mix back into the pan with sauerkraut. Stir thoroughly to blend flavors.
