Tender shredded pork chops in a hearty vegetable and potato soup.
Ingredients:
  • 3 cups chicken broth
  • 2 cups water
  • 2 (8 ounce) bone-in pork chops
  • 2 tablespoons soy sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon chili powder
  • 1 large bay leaf
  • 0.25 cup flour
  • 3 medium potatoes, peeled and cubed
  • 1 cup chopped broccoli
  • 1 medium carrot, diced
  • 1 medium onion, diced
  • 2 stalks celery, diced
Instructions:
  • In a large stockpot over medium-high heat, combine broth, water, pork chops, soy sauce, paprika, oregano, garlic powder, salt, pepper, chili powder, and bay leaf. Bring to a boil uncovered. Then reduce heat and simmer for 1 hour. Remove from heat. Transfer 3/4 cup cooking broth to a 2-cup liquid measure. Allow pork chops to cool on a cutting board for about 20 minutes.
  • Combine flour with reserved cooking liquid, then set aside. After cooling the pork chops, remove and discard bones. Shred or chop the meat into bite-sized pieces.
  • Combine potato, broccoli, carrot, onion, celery, and cooked pork in a stockpot. Bring to a boil. Stir in flour mixture, reduce heat, and simmer for 1 hour.
  • Fish out and discard the bay leaf, then delicately mash the potatoes. Serve promptly.
