Juicy pork chops nestled on a broccoli and creamy potato bed with a surprising twist of hash browns and condensed soup for a quick and delicious meal.
Ingredients:
  • 1 bag (20 oz) refrigerated cooked shredded hash brown potatoes
  • 1 can (11 oz) condensed Cheddar cheese soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 3 cups chopped fresh broccoli florets
  • 1 medium onion, chopped (1/2 cup)
  • 1 tablespoon olive or vegetable oil
  • 6 bone-in pork chops (1/2 inch thick)
Instructions:
  • Preheat oven to 350°F. Combine potatoes, soup, sour cream, milk, broccoli, and onion in a large bowl. Transfer mixture to an ungreased 13x9-inch (3-quart) glass baking dish, cover with foil, and bake for 30 minutes.
  • In a large skillet, heat oil over medium-high heat. Add half the pork chops and season with half of the salt and pepper. Cook for 3 to 5 minutes on each side until browned. Repeat with the remaining pork chops and seasoning.
  • Uncover the baking dish and arrange the pork chops on top of the potatoes, slightly overlapping. Bake for an additional 25 to 35 minutes until the edges are bubbly and the pork is cooked through.
